Olive Oil
Ingredients
2 (14.5oz)
Cans fire roasted diced tomatoes
1 Pkg
Aneto chicken broth
1 Tbsp
Tomato paste
½ Tsp
Chili powder
½ Tsp
Onion powder
1 Tsp
Cumin
15.5 Oz
Canned black beans, drained and rinsed
1 ½ Cups corn kernels
3 Cups
Rotisserie Chicken, pulled or diced
Salt And Pepper
2 Cups
Cooked Matiz paella rice

2 each bone-in skin-on chicken breasts

2 each bone-in skin-on chicken thighs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper (optional)

2 cups Aneto Chicken Broth

1/2 cup apple cider vinegar

1 jar BBQ sauce

Instructions:
  1. Place chicken pieces on a large plate and pat dry with paper towels. Season the pieces with garlic powder, onion powder, salt, pepper, and crushed red pepper, using your hands to rub the seasoning into the chicken.
  2. Transfer the chicken to the bowl of your slow cooker and add the broth and vinegar. Program to slow cook for 4 hours on high or 8 hours on low.
  3. Once the chicken is tender (almost falling off the bone), remove from the pot, and transfer to a large plate or bowl. Using a fork, remove the meat from the bones (discard the bones and skin) and shred into bite-sized pieces and chunks.
  4. Drizzle the pulled chicken with your favorite BBQ sauce and toss to coat. Serve with the BBQ pulled chicken with your favorite toppings (we love sweet pickles and crispy coleslaw).

About this recipe

This easy peasy slow cooker pulled chicken recipe is a crowd favorite. We made sure that, throughout every step in the cooking process, these chicken pieces are getting doused with flavor.

We start with a dry rub consisting of garlic powder, onion powder, salt, pepper, and crushed red pepper. Next, we submerge and slow simmer in a Aneto Chicken broth and vinegar bath.

Then, we drizzle with a jar of our favorite store-bought BBQ sauce! Delicious!
