2 (14.5oz)
Cans fire roasted diced tomatoes
1 Pkg
Aneto chicken broth
1 Tbsp
Tomato paste
½ Tsp
Chili powder
½ Tsp
Onion powder
1 Tsp
Cumin

Canned black beans, drained and rinsed
1 ½ Cups corn kernels
3 Cups
Rotisserie Chicken, pulled or diced
Salt And Pepper
2 Cups
Cooked Matiz paella rice

2 (15.5oz) cans of chickpeas, drained and rinsed

1/4 cup tahini

1 teaspoon ground cumin

1 garlic clove

1/2 teaspoon salt

Pinch of crushed red pepper flakes or paprika

1/2 cup Aneto Vegetable Broth

1 tablespoon lemon juice

1 tablespoon olive oil (plus extra for drizzling)

Cilantro or parsley for garnish (optional)

Toasted pita or naan for dipping  

Instructions:
  1. Place chickpeas, tahini, cumin, garlic, salt, crushed red pepper, broth, lemon juice, and olive oil in the bowl of a food processor. Blend until smooth.
  2. Transfer the hummus to a serving bowl and drizzle with additional olive oil (you can also garnish the hummus with additional pepper flakes or paprika and fresh cilantro or hummus).
  3. Serve hummus with toasted pita or naan (or your favorite pita chips or crostini).
